Why do different woods engrave such different colors?

What causes some species to produce dark, crisp marks while others barely change?

It's chemistry: lignin and resins in the wood caramelize differently under heat. Dense, resinous woods like cherry go dark brown, while lighter birch stays pale. The same board can even shade differently from one end to the other.
